How To Cook Indian Vegetable Stew - Recipe

Required products :

  • 2 tablespoons butter
  • 2 cups onion, chopped
  • 1/2 teaspoon salt
  • 2 teaspoons garam masala
  • 2 tablespoons curry powder
  • 2 teaspoons ginger root, peeled and grated
  • 2 cloves garlic, chopped
  • 1 cup carrots, diced
  • 1 cup potatoes, peeled and diced
  • 1 cup vegetable broth
  • 1 can of diced tomatoes
  • 1 can of chickpeas, drained
  • 1 cup coconut milk

for serving :

  • 3 cups basmati rice
  • 2 tablespoons fresh coriander, chopped
  • 2 tablespoons green onions
  • 6 tablespoons yogurt

* A tea cup is used to measure the quantities.

Method of preparation :

Melt the butter in a saucepan and fry the onions until soft. Season with salt, garam masala and curry powder, stir and cook for 3 to 5 minutes.

Add the ginger and garlic and cook, stirring, for about 1 minute. Pour the carrots and tomatoes, cook for another 2 minutes and pour the vegetable broth.

Let the stew simmer for 5 minutes or until the potatoes and carrots are soft.

Pour the tomatoes, chickpeas and coconut milk into the pan, stir and bring the stew to a boil, then reduce the heat and simmer for 30 to 45 minutes or until done.

Remove the stew from the heat, cool slightly and serve on boiled basmati rice. Garnish with fresh coriander, green onions and yogurt.
