Required products :

  • 2 teaspoons frozen blueberries
  • 1 grated lemon peel and its juice
  • 1/2 teaspoon + 2 tablespoons white sugar
  • 1/2 teaspoon + 2 tablespoons soft butter
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla (extract)
  • 1 1/4 tea cup white flour
  • 1 3/4 teaspoon baking powder
  • 1/2 teaspoon ginger powder
  • 1 pinch of salt
  • 1/2 cup fresh milk

Method of preparation :

Allow the oven to heat to 175 degrees while you prepare the dough for the cupcakes.

Rub 4 ceramic souffle (or caramel cream) bowls with oil.

Combine the blueberries, lemon zest and 2 tablespoons of white sugar and leave for a few minutes.

Melt 2 tablespoons of butter in the microwave and stir in the brown sugar. Distribute the resulting mixture between the prepared bowls, and put the blueberries on top.

Beat the remaining butter and white sugar with an electric mixer until the mixture becomes fluffy.

Add the eggs one at a time, and finally the vanilla and fresh lemon juice. Add the flour, baking powder, ginger and salt. Finally, add the milk. Spread the dough in the bowls on the blueberry mixture and bake for 25-35 minutes until dry.

Cool the cupcakes for 5 minutes, then pass a knife between the cupcake and the mold to peel it off. Turn into a suitable serving dish.

The cupcakes served in this way can be garnished with both cream and your favorite ice cream during the summer days.
