How To Cook Irish Stew With Lamb, Potatoes And Barley - Recipe

Required products :

  • 1 1/2 tablespoons olive oil
  • 800 grams of lamb fillet, cut into pieces
  • 2 onions, carrots and celery stalks, cut into 3 cm slices
  • 2 tablespoons flour
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcester sauce
  • 1/2 teaspoon barley
  • 2 bay leaves
  • 1 sprig of rosemary
  • 1 liter of beef broth
  • 500 grams cut into circles peeled potatoes
  • 100 grams of butter

Method of preparation:

Melt the butter in a large saucepan and fry the lamb in two batches for about 3 minutes on each side. Remove to a plate and set aside.

In the same pan, fry the vegetables for about 4-5 minutes until browned. Mix the flour and add the sugar and Worcestershire sauce, barley, spices and broth.

Bring to a boil, then reduce the temperature, simmer for 10 minutes, until the liquid begins to reduce.

Return the meat to the pan and season with salt and pepper.

Transfer the dish to a tray, cover it with kitchen paper and put foil or a lid on top. Cook for 1 1/2 hours at 150 degrees.

Meanwhile, grease the potatoes with butter and arrange them in 12 piles, place them on baking paper in a pan and bake them in the oven for the last 30 minutes of cooking the stew.

When the specified time has elapsed, increase the temperature to 250 degrees, remove the foil and bake for another 20 minutes, until the meat is ready and until the potatoes are golden.
