Required products :

  • 1 large chicken, cut into portions
  • 1 teaspoon flour
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon hot red pepper
  • frying oil, lard or both

Method of preparation :

  • Mix the flour and spices in a clean plastic bag with a closing mechanism.
  • Dry the meat with kitchen paper and transfer it to the bag.
  • Shake well to cover evenly with the mixture of flour and spices and shake off the excess.
  • Heat the fat in a deep cast iron skillet, keeping in mind that 1/3 of it needs to be covered.
  • To check if it is hot enough, put a cube of bread in the pan - it should brown within 1 minute.
  • Fry the chicken in portions, placing it skin side down. Once it acquires a golden color and a crispy crust, turn it over and fry again.
  • Transfer to kitchen paper to drain off excess fat.
  • Serve the fried chicken warm, garnished with your choice.
