Necessary products:

  • 400 grams of carrots
  • 400 grams of brown sugar
  • 1/2 cup walnuts
  • 1 cup coconut shavings
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cloves
  • vanillin - on the tip of a knife

Method of preparation:

Grate the carrots on a large grater, cover them with sugar and leave them for 1 night to release the juice. Then put them to boil on very low heat, adding cinnamon, cloves, lemon juice and vanilla. After a while, the carrots will become transparent and the syrup will thicken. Turn off the heat and allow the mixture to cool slightly. Now is the time to add the crushed walnuts.

Start making carrot balls by dipping your hands in cold water. Roll in the coconut shavings and arrange in a suitable container. You can shape the mixture into a roll, wrap it in foil and when it cools completely, cut it into pieces. The choice is yours.
