Clean and wash the fruit, cut the larger ones into pieces, and chop the mint finely. Mix all this in a bowl, sprinkle with powdered sugar and leave for 20 minutes.
Pour gelatin with cold water until soft.
Heat 100 milliliters of champagne over low heat, remove the gelatin from the water, drain it lightly and place the leaves one by one in the warm champagne. Stir with a spatula until completely dissolved, then remove the pan from the heat. Add the elderberry syrup and the rest of the champagne.
Distribute the fruit in suitable bowls or cups, pour the jelly (should be covered). Refrigerate the dessert for 3-4 hours.
Serve with your favorite ice cream and mint leaves.
