Necessary products:

  • 1 chicken (about 2 kg)
  • 1 large carrot
  • 1 large onion
  • garlic to taste 
  • salt to taste
  • 10-15 grains of black pepper
  • 2 bay leaves
  • 3 pack. 25 g of instant gelatin

Method of preparation:

Wash the meat and remove excess fat from it. Put it in a saucepan with a capacity of about 4 liters, add the washed and peeled onions and carrots. Pour cold water (to cover the meat). When it boils, remove the formed foam, reduce the heat and let it boil at a moderate temperature. The foam is removed until it stops forming. Boil the chicken for 2-2.5 hours on low heat, then remove from the heat and allow to cool. Remove the fat from the broth with a spoon. Add 3 liters of boiling water and more salt to it, because the meat is not salty. Put the bay leaf and black peppercorns. Remove from heat. Add gelatin to the broth (you can pre-dissolve it in a little boiling water). Stir until the gelatin is completely dissolved. Peel the garlic cloves, cut them in half and put them in the broth. Close the pot and let the aromas absorb. During this time, debone the chicken, remove the skin and cartilage, tear it into pieces and place in a suitable container. Garnish with boiled carrots. Strain the broth and carefully pour over the meat. Once cool, refrigerate for about 3-4 hours or more. Serve with mustard.
