Required products :

2 chicken legs

1 onion

1 medium carrot

2 - 3 bay leaves

12 grams of gelatin

1 - 2 cloves garlic

1 small boiled head of beets

spices to taste and optional

lettuce leaves for decoration

heart-shaped muffin tins

Method of preparation is:

Put the legs in 1 liter of water when it boils, remove the foam and add the peeled onions and carrots to the broth. Let everything boil over low heat. 15 minutes before removing from the heat, add the bay leaves and salt to taste.

Pour gelatin with 40 milliliters of water, wait for it to swell. Strain the broth, add gelatin and stir until dissolved. Then add the crushed garlic and black pepper. Add other spices, as you prefer, and 1-2 tablespoons of boiled beet juice to get a deep red color. Bone the meat and chop it into small pieces.

Pour a little of the pink broth into the muffin tins, put them in the freezer for about 5 - 10 minutes. Remove and place the meat on a firm base. Drizzle with broth and refrigerate overnight.

Remove the finished hearts from the molds and serve on a lettuce leaf. You can decorate with beetroot roses, outline with mayonnaise or mustard, for example.
