How To Cook Jelly Cold Appetizer Of Chicken And Beef With Garlic - Recipe

Required products :

  • 3 kilograms of beef
  • 1/2 chicken
  • 1 head old onion
  • 1-2 carrots
  • 1-2 bay leaves
  • head of old garlic or quantity to taste
  • black peppercorns and salt


Method of preparation :

Cut the beef into three pieces and fill it with water for at least 5 hours. Then rinse and put in a large saucepan along with half a chicken.

Fill both types of meat with cold water, which should cover them. Add the whole unpeeled onion, carrots, bay leaves and black peppercorns. Place the pan on the hob and let the liquid boil. Remove the foam that will form, reduce the temperature to a minimum and close the pot with a lid.

Allow the meat to simmer for 10 hours. Add salt at the end of the heat treatment.

During this time, the broth will reduce its volume by half, and the chicken and beef will have boiled enough.

Using a slotted spoon, remove the meat and bones from the liquid, strain the latter through several layers of gauze.

Bone the meat, remove all skins, skins, tendons and oily areas.

Peel a clove of garlic, finely chop the cloves and chop the meat. Pour the two products on the bottom of a glass jar.

Boil the broth once more, add salt if you see fit, and pour over the meat.

Wait until it cools down enough to store in the refrigerator, where the appetizer will cool and gel.

Before serving, remove the formed white layer of hardened fat.
