Required products :

  • 1 1/2 kilos of pork bon fillet
  • 8-10 slices of patterned bacon / long enough to wrap around the fillet 1.5 times /
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • salt and pepper

Method of preparation :

 

  • Season the pork fillet with salt and pepper.
  • Heat olive oil in a pan over high heat.
  • Fry the pork on all sides until golden brown.
  • Spread the bacon strips on a cutting board, leaving the edges slightly overlapping. The width should be large enough to fit the entire bon fillet.
  • Place the pork on top of the bacon. Use a knife to hold the strips together and wrap it tightly. The ends of the bacon should remain under the roll.
  • Use a brush to smear it with plenty of honey.
  • Bake in a preheated 180 degree oven for about 25-30 minutes, periodically spreading the roll with the sauce that has separated in the pan.
  • Remove from the oven, grease with honey and return to the oven until cool. Glaze with honey just before serving.
  • Serve the roll cut into thick slices.

Note!

Pork tenderloin is extremely tender meat and you should be especially careful not to overcook it.
