One of the best desserts with low carbohydrate content - fluffy and moist cupcakes with a smooth texture similar to a cake. This recipe proves that you don't need to use flour and sugar to make delicious muffins.

Required products (for 9 muffins) :

  • coconut oil for lubrication
  • 2 and 1/2 teaspoons almond flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon beehive salt
  • 4 tablespoons butter
  • 170 grams of cooking cream
  • 1/4 teaspoon almond extract
  • 4 drops of stevia extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon blueberries

Method of preparation :

Preheat the oven to 190 degrees and grease the muffin tins with coconut oil.

Mix almond flour, baking powder and salt in a bowl. In a large bowl, mix the butter, cream, eggs, almond extract, stevia and baking soda and mix until smooth.

Pour the dry to the wet ingredients and homogenize to a thick consistency. Fill the muffin tins with the resulting mixture almost to the top. Bake for 16 minutes or until lightly browned, then cool and serve with a cup of coffee or tea.
