How To Cook Keto Forest Cheesecake - Recipe

Required products :

  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup coconut shavings
  • 1/2 cup melted butter
  • 220 grams of cream cheese, soft
  • 450 grams of cream, at room temperature
  • 1 tablespoon stevia
  • 2 teaspoons vanilla extract
  • 3 large eggs at room temperature

for garnish:

  • fresh blueberries
  • strawberries cut in halves

* A tea cup is used to measure the quantities.

Method of preparation :

Preheat oven to 150 degrees. Grease an optional 20 or 22 cm round pan with a falling bottom. Cover the
bottom with aluminum foil on the outside.

the basis:

In a medium bowl, mix the almond and coconut flours together with the melted butter. Pour the resulting mixture into the pan and spread, pressing your fingers to the bottom, forming a swamp. Leave the pan in the refrigerator while you prepare the filling.

the filling:

In a large bowl, beat the cream cheese and sour cream with a mixer, then add the stevia and vanilla extract and continue beating until mixed. Add the eggs one at a time, beating with a mixer after each. Remove the cooled tray from the refrigerator and distribute the resulting filling evenly on top.

Put the cheesecake pan in a deep bowl and pour enough boiling water to cover half of the form. So bake cheesecake in a water bath for 1 hour - 20 minutes or until ready.

Then turn off the oven, but leave the cheesecake inside with the door slightly open to cool slowly for about 1 hour. Remove the pan from the water bath and remove the foil, then allow to cool in the refrigerator for at least 5 hours or overnight.

Cut into pieces and garnish with slices of fresh strawberries and blueberries.
