Required products :
1 bunch green onion
1 red chili pepper
1 green chili pepper
5 tablespoons rice vinegar
2 tablespoons ground black pepper
4 cm ginger root
5 tablespoons soy sauce
1/2 teaspoon sodium glutamate
2 tablespoons sugar
1 head Chinese cabbage
2 cloves garlic
3 tablespoons salt
Method of preparation :
Remove the top leaves of the cabbage, then cut into 4 pieces, which you cut crosswise into pieces about 1 cm wide. Put in a deep bowl and sprinkle with salt.
Cover with plastic wrap and let the cabbage stand for 24 hours. Then stir with your hands and drain the juice.
Cut the green onions into thin circles, peel the garlic and chop. Wash the green and red chili peppers, clean them from the stalks and seeds and chop finely.
Grate the ginger. Add all these products to the cabbage and stir.
Mix soy sauce with vinegar, sugar, red pepper, monosodium glutamate and pour a little water. Mix everything and pour into the bowl with the vegetables.
If the cabbage is not completely covered with the liquid, add water. Close with a lid and leave for 2-3 days.
Then the Korean pickle will be ready to eat.
