Required products :

  • 200 grams of biscuits
  • 100 grams of butter

For cream:

  • 400 grams of cream cheese (or cottage cheese that you passed 2 times through a sieve)
  • 350 milliliters of high-fat liquid cream (33%)
  • 150 grams of powdered sugar
  • 1 packet of vanilla sugar
  • juice of 1 lemon
  • 10 grams of gelatin

For the fruit layer:

  • 1 kg of kiwi
  • 200 grams of powdered sugar
  • 20 grams of gelatin

Method of preparation :

Grind the biscuits, mix them with the melted butter and spread the "dough" on the bottom of a round shape with a diameter of 24 cm, which you have previously covered with parchment paper.

Whip the cream with the vanilla and powdered sugar until creamy.

Prepare gelatin according to the instructions on the package.

Add lemon juice, swollen gelatin to the cream cheese (or cottage cheese) and stir.

Combine with the whipped cream and place the combination on the base of the biscuits (leave some of the filling for decoration).

Flatten the surface and place a small round bowl in the middle of it, the bottom and walls of which you have covered with plastic wrap. The dish should sink the cream and this will form a place for the kiwi filling.

Put the dessert in the refrigerator. Two hours later, remove the cheesecake, remove the bowl and carefully remove the foil.

Peel a kiwi and grind it in a blender until puree, add the sugar and place the fruit puree on the hob.

Let it simmer until the sugar has melted. You may not heat up, but simply wait for the necessary time for the sweet crystals to melt.

Make gelatin according to the instructions on the package and add it to the fruit puree. Stir, allow the mixture to cool slightly and carefully pour over the white cream.

Flatten and the cheesecake is ready. Decorate it as your imagination tells you and serve.
