How To Cook Korean Lamb Shank With Mashed Potatoes And Turnips - Recipe

Required products :

for the sauce:

  • 4 tablespoons curry paste
  • 5 cloves garlic
  • 3 tablespoons soy sauce
  • 4 cm ginger root, peeled and finely chopped
  • 3 tablespoons myrin
  • 1 tablespoon honey
  • 1 1/2 tablespoons sesame oil
  • 1/2 teaspoon black pepper

for meat:

  • 2 tablespoons olive oil
  • 2 lamb shanks
  • 400 milliliters of chicken broth
  • sea ​​salt and pepper
  • 2 green onion stalks, thinly sliced
  • 50 grams of roasted sesame seeds

for mashed potatoes:

  • 3 potatoes
  • 1 small turnip, peeled and cut into cubes
  • 4 tablespoons butter
  • milk

Method of preparation :

Preheat oven to 160 degrees.

Put all the sauce products in a food processor and grind them until smooth.

Heat 2 tablespoons olive oil in a pan with a fireproof handle and fry the meat on all sides to brown.

Pour the sauce over the shanks and pour the broth. After the liquid boils, cover the dish with foil and transfer to the oven. Bake 2 1/2 - 3 hours, until the meat is ready. Add more spices if needed.

Meanwhile, boil the potatoes and pumpkin until soft. Knead them warm and carefully pour a little milk to obtain a smooth puree. Add salt.

Put a large spoonful of the puree on the bottom of a plate, place a shank on top and generously pour the sauce from the pan. Sprinkle with fresh green onions and sesame seeds.
