Peel and crush the garlic cloves, break the bay leaves into small pieces, wash the lamb and cut into cubes (with a side of about 4 centimeters).
Mix the meat with the prepared spices and pour the beer. Add a sprig of thyme, stir and put the dish in the refrigerator overnight.
Drizzle the prunes with a mixture of liqueur wine and balsamic vinegar. They also have to stay until the next day. Then start cooking the dish.
Cut the bacon into thin strips, the peeled onion into semicircles and the celery into small pieces.
Remove the lamb from the marinade and dry it. Save the liquid.
In a suitable pan, heat a mixture of butter and oil and fry the meat in it until browned (about 4-5 minutes on each side). Then remove to a plate using a slotted spoon.
In the same pan / saucepan pour the chopped bacon, onion and celery. Let cook for about 6 minutes, stirring occasionally.
It's time to add the flour, stirring constantly so that no lumps remain.
Return the lamb to the bowl and pour in the marinade. Wait for the liquid to boil and season to taste.
Cover with a lid and cook on low heat for an hour and a half.
Then add the prunes along with the liquid and leave the dish on the stove for another half hour.
The lamb will literally melt in your mouth.
