Required products :
300 grams of lamb kidneys
100 grams of celery root
1 onion
1 red hot pepper (to taste)
3 cloves garlic
1 tablespoon flour
1 tablespoon cognac
2 tablespoons oil
salt to taste
Method of preparation :
Cut the kidneys in half, clean them of membranes, veins, fat. Wash them and fill with water for 35 minutes.
Peel an onion and cut it into semicircles. Cut celery root into thin straws.
Heat the oil in a pan, put the fat you have removed from the kidneys, add the onion, celery and fry everything for about a minute.
Remove the kidneys from the water, dry them and roll in flour. Put them in the dish with the other products and fry for 3-4 minutes.
You should add the pepper and garlic cloves, which you have previously cut into small pieces. Pour cognac, 3 tablespoons of water and add salt to taste.
Allow the dish to simmer until the liquid has completely evaporated.
Serve hot.
