Required products :

  • 1 kg of lamb
  • 5 tablespoons salt
  • 1/3 tablespoon mixture of different types of pepper (ground)
  • 1 tablespoon ready seasoning for meat
  • 1/3 tablespoon different types of peppercorns
  • 50 grams of ready-made spice for pastrami + for coating
  • 1/3 tablespoon chili pepper
  • 5 bay leaves

 

Method of preparation :

Mix all the spices. Roll the meat in the combination of aromas and flavors and let it stand in it for 2 days, turning it every 12 hours.

Then rinse the lamb under running water and soak it for an hour and a half. Remove from the water and place on paper. Place some weight on the meat so that excess moisture can drain away.

Pour the spice for pastrami with boiling water for 10-15 minutes. Then grease the meat and wrap it in gauze.

Hang it to dry in a ventilated place, taking about two weeks to be ready for consumption.
