Required products :

0.700 - 1 kg of lamb ribs

150 grams of vegetable oil (or sheep tallow, if you prefer)

500 - 700 grams of onions

salt, pepper, coriander, cumin seeds and other spices of your choice and taste

 

Method of preparation :

Divide the ribs into small portions, cut the onion into circles.

Heat the oil, fry the ribs in it for about 5 minutes, until they acquire a beautiful golden color, stirring constantly. Add the spices (cumin to grind).

Then spread the onion evenly over the ribs, no need to stir.

Close the pan with a tight lid, reduce the heat and let the dish cook for about 40 minutes to an hour (until ready) - the time depends on the amount of products and the temperature at which they are cooked.

Just before removing the pan from the heat, season the ribs and wait a few minutes for the meat and onion juices to form a fragrant sauce.

You can serve lavash or bread on bread and sprinkle with chopped parsley.
