Required products :

  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 250 grams of baby spinach
  • 1 clove garlic
  • 1/2 teaspoon cedar nuts
  • 1/2 cup golden raisins
  • 1 lamb leg fillet (whole)
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander

Method of preparation :

Fry the onion in olive oil until soft (about 8 minutes). Add the spinach and garlic (finely chopped). Once the petals soften, remove from the heat and add the nuts and raisins.

Thin the meat by cutting it to a length of 1 cm and continue, following the curve of the fillet, so that you thin it all evenly.

 

Season with salt, black and red pepper and spread the filling on it.

Roll up and fasten with kitchen string.

Transfer to a pan and bake for about 1 hour at 200 degrees, until the meat is ready (if you have a thermometer, check the temperature in the center of the roll, it should be about 70 degrees.

Let the meat rest for 10 minutes before cutting to keep the juices in it.
