Necessary products:

about 1.2 kg of lamb (with bone and kidneys)

2 onions

1 s. l. flour

3-4 cloves of garlic

2-3 tablespoons of fat

1 tbsp chopped parsley

1 tbsp chopped dill

Method of preparation:

Wash the meat and bone it, remove the skins and fat. Cut lengthwise into 4 pieces, onion cut into thin circles. Knock the strips of meat and season with crushed garlic and salt, pepper, sprinkle with vinegar. Then put the onion rings and close in a bowl with a lid. Let marinate for a few hours.

Cut off excess fat from the kidneys, wash well and soak in water for 30 minutes.

You will need 4 wooden skewers about 10 cm long.

Take the pieces of meat, after removing the onion, cut in several places across. String them on the skewers and sprinkle with flour.

Remove the kidneys from the water, dry them and cut them in half lengthwise. Sprinkle them with flour.

Fry the meat briefly in hot oil until golden brown. The inside should remain pink. Then put the fried meat in a suitable dish and place for a few minutes in a hot oven. In the remaining oil, fry the kidneys and onions without adding salt.

Remove the skewers from the oven and place a piece of kidney and a circle of onion on each of them. Drizzle with the fat in which you fried and sprinkle with chopped dill and parsley.

Serve with mashed potatoes, tomatoes or onions.
