Required products :

  • 2 tablespoons coconut oil
  • 4 lamb shanks
  • 1 onion, finely chopped
  • 2 chopped garlic cloves
  • 25 grams of finely chopped ginger
  • 2 teaspoons curry, hot pepper powder, turmeric, coriander seeds, cumin and fennel
  • 1 cinnamon stick
  • 800 milliliters of coconut milk
  • 4 teaspoons chicken broth
  • 400 grams of canned chickpeas
  • roses on 1 head of broccoli
  • 1 bunch kale, chopped

Method of preparation :

Heat olive oil in a large saucepan and place the shanks to brown - about 8 minutes. Take them out on a plate and set aside.

Put onion, garlic and ginger in a saucepan and fry for 5 minutes until soft. Return the meat to the pan and add the spices, coconut milk and broth. Simmer the dish for 3 hours (under a lid), until the meat is ready. Finally add the chickpeas, kale leaves and season with salt and pepper.

Remove from the heat and serve.
