Required products :

750 grams of lamb
1.5 kg of potatoes
1 onion
3 bay leaves
3 tablespoons olive oil
1-1.5 tablespoons butter
40 grams of fresh parsley
1 teaspoon dried thyme
salt and ground black pepper to taste

Method of preparation :

Wash the lamb and cut it into cubes with a side length of about 2 centimeters. Place them on paper until they absorb moisture and then fry in a pan with hot olive oil over high heat until golden brown.

 

Transfer the meat to a saucepan and pour half a teaspoon of boiling water into the pan, in which you dissolve the juice released during the frying of the lamb, stirring with a wooden spatula. Then pour it into the pot with the meat along with more boiling water (the liquid should be about 1 liter). Let simmer for 15-20 minutes on low heat.

 

Peel the potatoes, cut them lengthwise (as for frying).

 

Add to the lamb.

 

If necessary, pour more water to cover the potatoes, but no more.

 

Stir everything and leave on the stove until it boils. Close the pan with a lid and place in a preheated oven at 180 degrees for an hour, during which time stir the dish several times.

Peel an onion, chop finely and fry until golden in oil.


Once you remove the pan from the oven, add the fried onions, bay leaves, thyme, salt and ground black pepper to taste. Return the dish to the oven for another 5-10 minutes.

 

Then remove again, sprinkle with chopped fresh parsley and leave in the already switched off oven for 20 minutes.
