How To Cook Lamb Stew With Vegetables - Recipe

Required products :

  • 1 kg of lamb
  • 1 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon nutmeg
  • 1 1/2 teaspoons morxa salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 1 onion (diced)
  • 2 carrots - cut into crescents
  • 2 stalks of celery
  • 4 cloves garlic (pressed with a garlic press)
  • 1 large can of chopped tomatoes (800 grams)
  • 1 teaspoon dry red wine
  • 1 bay leaf
  • boiled rice for serving
  • 1/4 tea cup parsley for garnish

 

Method of preparation :

Cut the meat into pieces and put it in a bowl. Season with 1 teaspoon of cinnamon, nutmeg, 1 teaspoon of sea salt and pepper. Stir so that the lamb is evenly seasoned. Cover with cling film or lid and refrigerate for at least 30 minutes.

Heat 2 tablespoons olive oil in a saucepan over high heat. In portions, fry the lamb pieces on all sides for about 3-5 minutes. Transfer to a large clean bowl and repeat with the rest of the lamb. Do not overfill the pan, because you will not be able to make a nice crust of the meat.

Reduce the heat and add the onion (which you have previously chopped), the carrots, cut the celery and put it in the pan, add the remaining salt and crushed garlic cloves. Cook, stirring occasionally, until vegetables are tender - about 5 minutes. Add the remaining cinnamon and cook for another minute. Pour the wine and stir, trying to separate all the pieces that are stuck to the bottom of the vessel. Add the tomatoes, bay leaf, lamb and the juices that the meat has separated in the bowl. Stir and after the stew boils, reduce the heat and simmer for 2 hours under a lid.

Serve with rice and sprinkle with parsley.
