Required products :

  • 2 tablespoons oil
  • 450 grams of lamb cut into chunks
  • 8 whole grains of cardamom
  • 5 cloves
  • 2 teaspoons cumin seeds
  • 3 cm cinnamon stick
  • 2 onions, finely chopped
  • 6 crushed garlic cloves
  • 5 cm ginger root, grated
  • 2 teaspoons hot pepper powder
  • 2 teaspoons ground coriander
  • 2 teaspoons tomato paste
  • 3 tablespoons yogurt
  • 1 cube chicken broth dissolved in 650 milliliters of hot water
  • 300 grams of basmati rice
  • large pinch of saffron soaked in 2 tablespoons of warm water
  • fresh coriander leaves or mint to serve
  • sliced ​​almonds for serving

Method of preparation :

Heat 1 tablespoon of fat in a pan and fry the meat (in one row and in several batches, if necessary) until it acquires a crust. Transfer to a plate.

Reduce heat to low and add remaining fat. Add the spices, except for 3 cardamom seeds. Add onion and salt, fry for 15-20 minutes until soft.

Transfer half of the mixture to a bowl.

Add the garlic and ginger to the remaining onions in the pan and fry for a minute or two. You should also add the ground spices. Return the meat to the pan, add the tomato paste and yoghurt. Stir and pour 250 milliliters of broth, simmer under a lid for 1 hour. If necessary, add water, but when the allotted time has passed, the sauce should be thick.

Add the rice and the remaining broth, cardamom and salt. Allow to boil until the rice is ready for about 15 minutes and the last 5 minutes under the lid. Stir in the rice with a fork to keep it airy.

Put the mixture in a pan and top with saffron water, separated onions and bake for 30-40 minutes under foil.

Serve the dish sprinkled with sliced ​​almonds, coriander and yogurt.
