Heat a 20 cm pan on the hob.
Cut the bacon and fry it in a hot pan until crispy. Drain the fat on paper.
Turn the oven to 220 degrees.
Beat the eggs, add the flour, milk, mustard, salt and pepper. Add the bacon and stir.
Put the butter in the pan and wait for it to melt. Pour the dough, sprinkle with yellow cheese and bake in the oven until the pancake is firm.
Sprinkle with parsley and serve the pancake warm.
From the quantity two large portions or three smaller ones are obtained.
