Required products :

3 teaspoons flour
2 eggs
1/2 teaspoon salt
100-125 milliliters of cold water

Method of preparation :

Mix the eggs with the water in a bowl and add the salt. Beat with a mixer (do not turn on the appliance at the fastest speed).

Then add the flour, which must be sifted in advance. Knead the dough.

It must be obtained firmly. Knead it for 10-15 minutes. It will eventually become elastic, but will not stick to your hands.

Cover with plastic wrap and let stand for about 30 minutes.

You should roll out thin sheets. Be sure to sprinkle a little flour on the hob and the dough itself. The thinner the crusts, the tastier the lasagna you will make.

Cut the rolled layers into rectangles. You can match their size to the shape you will use to bake the dish.

You can use part of the kneaded dough immediately (without boiling), and leave the rest to dry for 2-3 days. Place it on a sheet of parchment in one layer. When you decide to use, cook for 3-4 minutes before moving on to assembling the lasagna.

You could make a green dough by including spinach pre-milled with the help of a blender.

Use good quality wheat flour and fresh eggs.
