Method of preparation :
Start by preparing the sauce.
Put 2 tablespoons of olive oil in a large pan and fry the chorizo sausage with rosemary, garlic, carrot, onion and celery. Chop the chorizo during frying. Cook for about 8-10 minutes, until the meat is ready and until the vegetables are soft.
Add the minced meat and also chop and fry. Finally, add the tomato paste and wait 5 minutes.
Pour the wine, and two minutes later add the broth and canned tomatoes. Reduce heat and simmer for 1 hour until thickened.
Assemble the pasta: put some of the sauce on the bottom of a pan, and on top put 3 lasagna sheets, cover with the remaining tomato sauce.
Stir in the mascarpone and add the crushed lasagna leaves to it and pour over the sauce in the pan. Place slices of mozzarella on top and cook under foil until the pasta softens - about 12 minutes at 200 degrees.
Then remove the foil, sprinkle with Parmesan cheese and bake on high heat until done.
