Required products :

  • 700 grams of flavored minced meat (or use the inside of an equal amount of raw sausages)
  • 2 tablespoons olive oil
  • 2 onions, finely chopped
  • 4 crushed garlic cloves
  • 2 teaspoons fennel seeds
  • 2 teaspoons dried oregano
  • 1/2 teaspoon chili flakes (optional)
  • 1 tablespoon sugar
  • 500 milliliters of tomato sauce (passata)
  • 400 grams of chopped canned tomatoes
  • 100 grams of butter
  • 2 bay leaves
  • 100 grams of flour
  • 1 liter of fresh milk
  • 1/4 teaspoon nutmeg (freshly grated)
  • 100 grams of baby spinach
  • full handful of fresh basil leaves
  • 50 grams of parmesan (grated)
  • 250 grams of lasagna leaves (about 12 pieces)
  • 50 grams of grated cheddar
  • 150 grams of fresh mozzarella (sliced)

Method of preparation :

Form small meatballs from the minced meat. Fry them in 1 tablespoon of olive oil in a small saucepan in several batches. When they turn brown on the outside, take them out of the pan, let them not overcook.

Fry the onion in the remaining olive oil for 8-10 minutes until soft. Add fennel, oregano and chili. After 2 minutes, add the sugar, tomato products and add a little water. Season with salt and pepper and simmer under a lid for 30-40 minutes.

Melt the butter in a saucepan, add the bay leaf. A minute later, mix the flour to make a thick paste. Add the milk in a thin stream, stirring constantly. You will get a thick sauce. Add the nutmeg and season with salt and pepper. Leave for 5 minutes on low heat, stirring occasionally.

Set aside 10 of the meatballs and put the rest in the tomato sauce.

Pour half of this sauce into a pan, sprinkle with half of spinach, basil and a little Parmesan. Cover with 1/3 of the white sauce and place the lasagna leaves on top (if necessary, break some of them to cover the whole pan).

Repeat in the same order - tomato sauce with meatballs, spinach, basil, parmesan, white sauce, pasta. Drizzle with remaining white sauce. Arrange the meatballs you saved on top. Arrange the mozzarella slices between them, sprinkle with cheddar and parmesan. Bake in a preheated oven at 190 degrees, until golden for about 40-45 minutes.

Allow to cool for 5-10 minutes before slicing.
