Required products :

  • 1/2 cup chopped chocolate
  • 1/2 teaspoon cream
  • 4 tea cups crushed chocolate cake
  • 1/2 cup chocolate butter cream
  • 450 grams of chocolate drops to cover or chocolate

Method of preparation :

Put the chocolate in a fireproof bowl.

In a saucepan, heat the cream until it boils and pour it over the crushed chocolate. Stir to combine the two products.

Place a sheet of foil on the chocolate, pressing it so that there is no air between them, and refrigerate for 30 minutes.

When the ganache is firm, form small balls of it, which you put back in the refrigerator for 30 minutes.

Meanwhile, combine the cake crumbs with the chocolate cream, stirring with your hands to mix. Test whether the humidity is correct by trying to form a ball. If it stays whole and is not crumbly, then it is good, if not, you need to add a little more cream or cake.

Form balls from the cake mixture and press them into the small ganache balls, which you cover well with the "dough" to get truffles. Arrange them on a tray and refrigerate for 30 minutes to firm up.

Melt the chocolate drops and dip the balls in the resulting glaze to roll. Arrange again in the pan and wait for them to set. You can decorate with melted dark chocolate or crushed nuts.

Store the truffles in a box in the refrigerator, waiting for them to warm to room temperature before serving so that you can enjoy the melting chocolate in the middle.
