How To Cook Lean Apple Muffins With Oatmeal And Cinnamon - Recipe

Required products :

For the dough :

  • 1 teaspoon flour
  • 1/4 tea cup wholemeal flour
  • 1/2 cup fine oatmeal
  • 1/2 teaspoon brown sugar
  • 1/4 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/3 tea cup vegetable oil
  • 1/2 tea cup apple sauce
  • 1/3 tea cup apple cider

About the topping :

  • 1 apple, peeled and cut into cubes
  • 1 tablespoon brown sugar
  • 1 teaspoon cinnamon

Method of preparation :

 

  • Preheat the oven to 180 degrees and grease a standard muffin tin.
  • In a small saucepan, saute the apples with the brown sugar and cinnamon for 5 minutes.
  • When the apples are soft and caramelized, remove from the heat and set aside.
  • In a large bowl, mix the two types of flour, oatmeal, brown and white sugar, salt and baking powder.
  • Add the vegetable oil, apple sauce and apple cider and stir with a wooden spoon enough to mix.
  • Add the caramelized apple pieces and stir briefly to distribute evenly.
  • Distribute the mixture in the muffin tin, filling 3/4 of each nest.
  • Bake for 18 minutes or until a toothpick comes out clean from the center of the cupcakes.
  • Allow the apple muffins to cool briefly before removing and serving.
