Required products :

  • 500 grams of potatoes
  • 1 handful of parsley, finely chopped
  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 630 grams of mushrooms, thinly sliced
  • 2 crushed garlic cloves
  • 1/4 teaspoon crushed hot pepper
  • 250 grams of cooked lentils (canned)
  • 400 grams of chopped tomatoes
  • 2 tablespoons tomato paste

Method of preparation :

Boil the potatoes in salted water for 12-15 minutes until soft. Strain them and return them to the same pan (if you cook them whole, peel and cut). Season with salt and pepper and mash them with a fork. Add half the amount of parsley.

Heat 2 tablespoons olive oil in a pan and fry the onions until translucent, about 2-3 minutes. Add the mushrooms and continue cooking for another 8 minutes to soften. Stir occasionally.

Add the garlic, hot pepper, lentils, chopped tomatoes and puree, add 250 milliliters of water. Stew under a lid for 8-10 minutes until the sauce thickens. Add the remaining parsley and season.

Transfer the mixture to a pan and cover with mashed potatoes. Drizzle with olive oil and bake only on high heat for about 10 minutes, until it catches a crust (if you do not want a lean version, you can sprinkle with cheese and bake).
