How To Cook Lean Vine Sarma With Rice, Onion And Parsley - Recipe

Required products :

  • 450 grams of marinated vine leaves
  • 10 heads peeled and chopped old onions
  • 2 teaspoons rice
  • 1 teaspoon chopped parsley
  • 1/2 teaspoon olive oil
  • 1/3 tea cup cedar nuts
  • 1/4 tea cup dried blackcurrants
  • 1 tablespoon dried mint
  • 1 teaspoon ground allspice
  • 1/8 teaspoon ground black pepper
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon sugar
  • 2 teaspoons lemon salt
  • juice of 1/2 lemon


Method of preparation :

Fry the chopped onion in 1/4 tea cup of olive oil until transparent. Then add the pine nuts and fry for another 5 minutes.

Next is the rice, and 5-10 minutes later (during this time stir constantly, the grains should become transparent) and add the spices (cinnamon, mint, lemon salt, black pepper, black currant, sugar and allspice). Finally, add the chopped parsley, stir and pour 1/2 teaspoon of boiling water. Let the products simmer on low heat for 15-20 minutes, until all the liquid is absorbed by the rice. Then remove the pan from the heat and allow the contents to cool.

Put this stuffing on the vine leaves and make sarmi, which you arrange tightly in a large saucepan with a thick bottom.

Pour the remaining olive oil, juice of half a lemon and 2 teaspoons of boiling water. Place the plate upside down on the sarma and place the dish on the hob.

Once the liquid boils, reduce the temperature and let the dish boil until the rice absorbs all the water (about 45-60 minutes).

Serve the prepared sarma chilled.
