Required products :

  • 3/4 cup soft butter
  • 1/3 tea cup powdered sugar for the dough
  • 1 teaspoon finely grated lime peel
  • 2 tablespoons lemon juice
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 1 3/4 tea cups flour
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 2 teaspoons powdered sugar for rolling

Method of preparation :

Beat the butter for 30 seconds with a mixer on medium speed. Add powdered sugar, lime peel, lemon juice, water and vanilla. Beat until smooth, then add flour, cornstarch and salt. When the dough becomes thick, knead by hand or use a spatula.

Divide the dough into two equal parts. Roll each, wrap in cling film and refrigerate for 3 hours (or up to 2 days).

Preheat oven to 170 degrees. Line a tray with parchment paper and cut 1 cm slices with a thin knife.

Arrange them at a distance from each other in the pan and bake them for 15-18 minutes until golden.

The biscuits should be cooled for 4-5 minutes before removing them from the pan. Roll the warm biscuits in powdered sugar.

Store in a candy box at room temperature for 3-4 days or up to 3 months in the freezer.
