Required products :

  • 4 large lemons
  • 350 grams of powdered sugar
  • 4 large eggs
  • 100 grams of butter

 

Method of preparation :

Peel the lemons - you can use a knife for this purpose or "peel" their skin with a grater. The most important thing is not to overdo it and not to catch the white part - just grate the yellow part.

 

Drain the juice from the "bald" lemons, mix it with the peel and add the powdered sugar. Stir until the sugar is completely dissolved.

 

Cut the butter into cubes and pour it into the resulting mixture. Put everything in a water bath to warm up.

 

Meanwhile, in a separate bowl, beat 4 large fresh eggs with a mixer.

 

Stir the butter into the lemon mixture until it melts.

 

When this happens, start pouring a thin stream of the mixture into the beaten eggs.

 

Let the cream cook in a water bath for about 20 minutes, stirring constantly until the consistency thickens and acquires a yellowish color.

 

Transfer the cream to a dry sterilized jar. If you used chopped bark instead of grated, it is better to strain first. Close the jar tightly. That is all.
