How To Cook Lemon Cake With Coconut Shavings And Blackcurrants - Recipe

Required product and :

  • 225 grams of soft butter
  • 225 grams of sugar
  • 5 eggs
  • 275 grams of self-swelling flour
  • 100 grams of coconut shavings
  • 200 grams of fresh currants
  • peel of two lemons, finely grated
  • 2 tablespoons fresh milk

for lemon glaze:

  • 3 tablespoons lemon juice
  • 225 grams of powdered sugar (sifted)

Method of preparation :

Preheat oven to 180 degrees. Grease a rectangular tray (measuring 30 by 23 centimeters) with grease of your choice and place a sheet of baking paper on top.

Mix the butter and sugar with a mixer.

Beat the eggs in a separate bowl and mix the flour and baking powder in a third.

Alternate eggs and flour and alternate adding them to the buttercream. When all the products are combined, add 75 grams of coconut shavings, the whole amount of blackcurrants and most of the lemon peel (save just a little for decoration). Add the milk and stir.

Place the dough in the prepared pan and sprinkle with the remaining coconut shavings.

Bake for 35 minutes, then cool completely.

Prepare the glaze by mixing sugar and lemon juice.

Make a grid on the cake, sprinkle with a little lemon zest and serve.
