Grind the crackers in a robot or coffee grinder and combine them with the fat, press them on the bottom of a cake tin.
With an electric mixer beat the cream cheese, yogurt 2/3 teaspoon sugar. Add the eggs one at a time, finally the lemon zest, juice and vanilla.
Pour the mixture into the pan and bake for 1 hour at 160 degrees. Cool for 1 hour at room temperature, then refrigerate for at least 4 hours.
Increase the oven to 180 degrees.
Spread the lemon cream on the cheesecake.
Beat the egg whites in the snow with a mixer, along with 2 tablespoons of sugar, which you need to put after the eggs have already formed a cream.
Spread the eggs on the cheesecake and bake for 8-10 minutes until the eggs are lightly browned.
Refrigerate before serving.
