Required products :

For the bark :

  • 2 teaspoons graham crackers, consumed
  • 3 tablespoons sugar
  • 1/2 cup salted butter, melted

For cream :

  • 2 teaspoons + 2 tablespoons sugar
  • 1 tablespoon cornstarch
  • 230 grams of cream cheese
  • 4 large eggs
  • 2/3 tea cup sour cream
  • 1/3 tea cup cream
  • 1/2 cup freshly squeezed lime juice
  • 1 1/2 teaspoons vanilla extract

About the topping :

  • 1 teaspoon cream
  • 2 1/2 tablespoons sugar
  • fresh raspberries or strawberries
  • slices of lime
  • grated lime peel
  • fresh mint leaves

Method of preparation :

 

  • Preheat oven to 180 degrees.
  • In a bowl, mix the crushed graham crackers, sugar and melted butter. Stir with a fork.
  • Pour the butter crumbs into a 23-centimeter round baking dish and press with your palms to a thickness of about 2.5 centimeters.
  • Bake the biscuit crust for 10 minutes, then allow it to cool completely.
  • Reduce the oven temperature to 160 degrees.
  • In a small bowl, mix the sugar and cornstarch.
  • Transfer the cream cheese to a large bowl and sprinkle with the sugar mixture.
  • Beat with a mixer until smooth and start adding the eggs one by one, beating between them just enough to mix.
  • Add the cream and stir briefly.
  • Add the freshly squeezed lime juice and vanilla extract. Stir again.
  • Pour the cream over the cooled biscuit crust and lightly level the surface.
  • Wrap the outside of the form with aluminum foil and bake the cake for 60 minutes.
  • Remove from the oven, allow to cool to room temperature, then refrigerate for a minimum of 8 hours or overnight.
  • Before serving the cheesecake, prepare the topping by whipping the cream until the stirrers begin to form soft peaks.
  • Add the sugar and turn on the mixer again to form a thick cream.
  • Decorate the lemon cheesecake with cream topping, fresh fruit, lime and mint.
  • Serve with a smile!
