How To Cook Lemon Chicken Fillet With Butter And Fresh Herbs - Recipe

Required products :

  • 1/3 cup fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 1 tablespoon lemon peel, cut into thin strips
  • 2 cloves garlic, pressed or finely chopped
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 chicken breasts, cut in half lengthwise
  • salt and freshly ground black pepper
  • 1/2 cup chicken broth or more

Method of preparation :

 

  • In a small bowl, combine the chopped parsley, thyme, lemon zest and garlic.
  • Heat the butter and olive oil in a large skillet over medium heat.
  • Season the chicken breasts with salt and freshly ground black pepper on both sides.
  • Add to the pan and fry for about 3-4 minutes until lightly browned and easily separated from the pan. Turn and cook for another 2-3 minutes.
  • Transfer the fillet to a plate and reduce the heat.
  • Carefully add the broth to the pan and stir.
  • Add the mixture of fresh herbs, lemon and garlic and stir again.
  • Let the sauce simmer until it thickens slightly and return the chicken fillets to the pan.
  • Use a spoon to pour the sauce over them, cover and cook for another 5-6 minutes. If the liquid decreases too quickly, add some more of the broth.
  • Serve the chicken steaks warm, garnished with lemon-herb sauce.
