Learn how to cook "Lemon chicken fillet with butter and fresh herbs". Delicious recipe.
Required products :
- 1/3 cup fresh parsley, finely chopped
- 1 tablespoon fresh thyme leaves, finely chopped
- 1 tablespoon lemon peel, cut into thin strips
- 2 cloves garlic, pressed or finely chopped
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 chicken breasts, cut in half lengthwise
- salt and freshly ground black pepper
- 1/2 cup chicken broth or more
Method of preparation :
- In a small bowl, combine the chopped parsley, thyme, lemon zest and garlic.
- Heat the butter and olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt and freshly ground black pepper on both sides.
- Add to the pan and fry for about 3-4 minutes until lightly browned and easily separated from the pan. Turn and cook for another 2-3 minutes.
- Transfer the fillet to a plate and reduce the heat.
- Carefully add the broth to the pan and stir.
- Add the mixture of fresh herbs, lemon and garlic and stir again.
- Let the sauce simmer until it thickens slightly and return the chicken fillets to the pan.
- Use a spoon to pour the sauce over them, cover and cook for another 5-6 minutes. If the liquid decreases too quickly, add some more of the broth.
- Serve the chicken steaks warm, garnished with lemon-herb sauce.
