Required products :
280 grams of flour
120 grams of butter
2 lemons
5 tablespoons powdered sugar
5-6 tablespoons coconut shavings
3 eggs
180 grams of granulated sugar
baking powder
1 packet of vanilla sugar
Method of preparation :
Wash the lemons, scald them with boiling water, then grate their skins with a fine grater. Drain the citrus juice and add boiled water, if necessary, to obtain an amount of 100 milliliters.
Mix the softened butter with 180 grams of flour, add powdered sugar, vanilla, 1 teaspoon of grated citrus peel. A crumbly mixture will be obtained.
Cover the bottom of a suitable form with parchment, grease with oil and distribute the dough evenly. Bake in a preheated 180 degree oven for about 15 minutes until golden.
Separately mix the remaining flour with the coconut shavings, crystal sugar, pour the lemon juice, add the eggs and beat everything with a mixer and add the remaining lemon peel.
Spread the combination on the baking sheet and return to the oven for another 20 minutes at the same temperature.
Let the cake stand overnight and you can serve sprinkled with almond shavings or powdered sugar.
