Necessary products:

  • 125 grams of flour
  • 50 grams of corn (instead of wheat flour and corn you can use corn flour)
  • 1 tsp baking powder
  • pinch of salt
  • 1/4 tsp ground ginger
  • 150 grams of sugar
  • 90 grams of butter
  • 1 egg
  • grated rind of 1 lemon

Method of preparation:

Allow the oil to soften at room temperature. Add the sugar to it and mix until you get a uniform consistency. Then put the egg and beat to get a tender air mass. Add the grated lemon peel to the mixture. In a separate bowl, mix the flour, corn, baking powder, salt and ginger. Then combine the two mixtures and mix well.

Line a baking tray with parchment paper, form balls of dough, flatten slightly and arrange them in it (each ball the size of a tablespoon), leaving a distance of about 5 cm between them.

Bake in a preheated oven at 180 degrees for 15 minutes.
