Required products :

  • 1 lemon (peel)
  • 100 milliliters of lemon juice
  • 4 eggs
  • 75 grams of butter
  • 80 grams of granulated sugar
  • 1 sheet of gelatin
  • 100 grams of mascarpone
  • 20 grams of powdered sugar

 

Method of preparation :

Pour cold water over the gelatin, cut the citrus peel very finely, and beat three of the eggs with the sugar until white.

Melt the butter in a small saucepan, add the lemon zest and juice, eggs and cook over low heat until thickened, stirring in the meantime. Remove from the heat, add the gelatin (drained of water) and stir until dissolved.

Divide the fourth egg into egg whites and yolks. Beat the mascarpone with the yolk and beat the egg whites to a stiff foam, adding the powdered sugar at the end of the process. Then mix with the mascarpone.

Distribute the two creams (lemon and mascarpone) in tall glass cups, alternating layers of them. To make it easier for you, you can use a pastry syringe.

Put the dessert for three hours in the refrigerator and then you can enjoy the taste.
