Required products :

  • 1 1/2 teaspoons vanilla paste
  • 2 1/2 teaspoons cream
  • peel of 2 lemons, grated
  • 7 large yolks
  • 1/2 teaspoon sugar
  • hot water for the water bath
  • 6 tablespoons powdered sugar

Method of preparation :

  • Preheat the oven to 160 degrees and place 6 bowls of creme brulee in a pan.
  • Heat the cream, vanilla and lemon zest in a saucepan over medium heat.
  • When the mixture starts to rise along the edges, remove it from the hob. Stir and let stand 10-15 minutes.
  • In a large bowl, beat the egg yolks with the sugar until smooth and creamy.
  • Carefully start adding the cream mixture, stirring constantly.
  • Spread the egg cream in the bowls and fill the pan with hot water to the middle of their walls.
  • Bake for about 35-45 minutes until the cream is firm, but still softer in the middle.
  • Remove from the oven and allow to cool completely.
  • Cover the cups with plastic wrap and refrigerate for at least 2 hours.
  • Before serving creme brulee, sprinkle each with 1 tablespoon of powdered sugar and caramelize it with a cooking burner until golden brown.
  • Wait for it to cool to form a crispy crust and serve.
