Required products :

  • 6 egg yolks
  • 2 teaspoons whipped cream
  • 1/3 cup sugar
  • 1 teaspoon vanilla
  • 1 tablespoon grated lemon zest
  • boiling water
  • 8 teaspoons of sugar
  • 1/2 cup fresh raspberries

Method of preparation :

Preheat oven to 180 degrees.

Beat the egg yolks with a wire spoon.

Mix the whipped cream with the sugar, vanilla and lemon zest until smooth. Combine the beaten egg yolks with the cream mixture.

Pour the mixture evenly into 4 small porcelain cream bowls and arrange them in a tray. Carefully pour boiling water into it so that it covers 2/3 of the bowls. Bake the dessert for 30-40 minutes or until lightly golden brown.

Remove from the tins and cool to room temperature. Sprinkle with 2 teaspoons of sugar each of the cream brulets and caramelize it with a burner. Garnish with fresh raspberries and serve.
