Necessary products:

  • 5 large eggs
  • 5 tablespoons sweetener (sugar, honey or other)
  • peel of 1 lemon, grated
  • 2 teaspoons vanilla extract
  • 125 grams of flour

for decoration:

  • 100 grams of soft low-fat cheese
  • 4 tablespoons lemon jam with butter
  • 300 grams of skim yogurt
  • edible spray with golden luster

Method of preparation:

Preheat oven to 190 degrees. Put baking paper in muffin tins.

Separate the egg whites and yolks in two clean bowls. Fill the pot with water halfway and bring to a boil, then remove from the heat and place the bowl with the egg white on the pot, but without touching the water. Pour the sweetener over the egg whites and beat with a mixer until hard peaks form.

Add the egg yolks and beat for 3 minutes until you get a thick creamy consistency. Remove the bowl from the pan and add the grated lemon peel, vanilla extract and flour. Spread the mixture in the muffin tins and bake in the preheated oven for 10 minutes, then reduce the temperature to 170 degrees and bake for another 15-20 minutes or until golden.

Mix soft cheese, lemon jam with butter and yogurt in a bowl . Mix until homogeneous. Pour the cream into a syringe with a star tip.

Decorate the cooled cupcakes with lemon cream and spray with golden glitter spray, serve.
