Required products :

  • 1/2 teaspoon lemon juice, freshly squeezed
  • 2 teaspoons grated lemon peel
  • 1/2 teaspoon sugar
  • 1/2 teaspoon melted butter
  • 2 eggs, only the yolk

Method of preparation :

  • Combine lemon zest and sugar in a blender on high speed.
  • Add the egg yolks and lemon juice and beat the mixture for about 10 seconds.
  • Add the butter without turning off the blender until a homogeneous mixture is obtained.
  • Heat the lemon jam in a small saucepan over medium heat until thickened (about 10 minutes).
  • After cooling, pour the mixture into a clean glass jar, close it tightly and store in refrigerator.
  • Serve the lemon jam with toasted slices or use it to make various cakes.
