Necessary products:

130 ml of lemon juice

7-8 g of gelatin

peel of 1/2 lemon

200 ml cream with a fat content of not less than 25%

120 g of sugar

2 egg whites

Method of preparation:

Put gelatin in a small saucepan, add lemon juice and stir. Stirring, bring to a boil over low heat, cook for 2 minutes and allow to cool. Whip the cream to a froth and refrigerate. Pour the sugar into a saucepan and pour enough water to soak the sugar. Leave on the stove and stir until melted. Boil the syrup at 120 degrees (or a little more) to have time to break the egg whites to a froth (they should be cold). Without interrupting the beating, add the syrup, pouring a thin stream. Its temperature should not be lower than 120 degrees. Keep beating until you get a thick and very thick foam. Add lemon zest and gelatin with lemon juice. Mix well, add the cream and mix well again.

The mousse is ready. Distribute in suitable containers in which to serve (you can use a pastry syringe for this purpose or a spoon) and place in the refrigerator to set.

Once removed, garnish the dessert with lemon slices, mint leaves and enjoy this fragrant sweet and sour temptation.
