Necessary products :
250 grams of flour

  • 2 1/2 teaspoons sugar
  • 3 eggs
  • 450 milliliters of milk
  • 1 tablespoon butter
  • 1 1/2 teaspoons vanilla
  • Oil
  • 6 1/2 teaspoon lemon cream
  • 1/4 teaspoon corn flour
  • 2 1/2 lemons - 2 of them grated rind and juice, 1/2 sliced ​​for decoration
  • 750 grams of low-fat yogurt

Method of preparation :

Mix the flour, 1 1/2 tablespoons of sugar and a pinch of salt in a bowl. Make a well in the center and knock the eggs there. Pour 100 milliliters of milk and stir. Add the butter, vanilla and remaining milk. You must have liquid pancake batter.

Bake about 25-27 thin pancakes in a greased pan and leave to cool completely.

Mix the remaining 1 tablespoon of sugar with the juice of 1 lemon, leave for 5 minutes to dissolve the crystals.

Heat 5 tablespoons of lemon cream in a saucepan.

While it is heating, mix the corn flour with the remaining lemon juice and add to the warm cream, add the juice mixed with the sugar. Simmer for 5 minutes, then cool to room temperature.

Mix the remaining lemon cream with the yoghurt and half of the lemon peel. Start assembling the cake, put a pancake on a tray and spread with 1 1/2 tablespoons of the milk mixture. Place the next pancake, spread and continue until the pancakes are finished. Leave for 30 minutes in the refrigerator.

Remove the pancakes from the refrigerator 15 minutes before serving the cake and pour the lemon cream and arrange a few slices of fruit.
