Required products :
- 2 teaspoons flour
- 1/2 teaspoon baking soda
- 1 tablespoon baking powder
- 2 tablespoons sugar
- pinch of salt
- 1 teaspoon vanilla extract
- 1 cup fresh milk
- 2 eggs, lightly beaten
- 1/2 cup cheese, crushed
- peel of 1 lemon, finely grated
- 2 tablespoons lemon juice, freshly squeezed
- 1 cup fresh blueberries
- oil for the pan
For garnish :
- honey
- oil
Method of preparation :
- In a large bowl, mix the flour, baking soda, baking powder, sugar and salt. Stir and set aside.
- In a small bowl, combine the vanilla extract, milk, eggs, cheese, lemon zest and freshly squeezed lemon juice.
- Add the wet to the dry ingredients and mix until homogeneous.
- Add the blueberries and stir again.
- Heat a non-stick frying pan over medium heat and grease it with oil.
- Pour 1/2 tea cup of the mixture and bake for about 3 minutes until the edges start to harden.
- Turn and bake for another 1-2 minutes. Repeat with the remaining dough.
- Serve the pancakes warm, garnished with honey and butter.
