How To Cook Lemon Puff Pastry Cake - Recipe

Required products :

  • 2 sheets of puff pastry
  • 400 milliliters of cream
  • 350 milliliters of fresh milk
  • 1/2 teaspoon powdered sugar
  • 1 tablespoon butter
  • 2 teaspoons vanilla paste
  • 3/4 tea cup of lemon verbena leaves
  • 1 teaspoon lemon zest, finely grated
  • 1/2 teaspoon water
  • 1/2 cup corn flour
  • 6 egg yolks, lightly beaten
  • powdered sugar for sprinkling

Method of preparation :

 

  • Preheat oven to 180 degrees.
  • Cut the puff pastry so that it fits in a square tray measuring 20 cm.
  • Cover the pan with parchment paper, place one sheet of dough and cover with a second sheet of parchment paper.
  • Place another baking tray on top to prevent the dough from inflating too much while baking.
  • Bake for about 15-20 minutes until light golden brown and cool on a wire rack. Repeat with the second sheet of puff pastry.
  • Heat the milk, sugar, butter, vanilla, lemon verbena leaves and lemon zest over low heat.
  • Stir and let the mixture heat up without boiling.
  • Remove from the heat, cool for 10 minutes, strain and return to the pan. Discard the leaves.
  • In a large bowl, mix the cornflour with the water and mix until smooth.
  • Add the milk, cream and beaten egg yolks and stir again.
  • Return the pan to the hob and reheat on low heat.
  • Gradually add the egg mixture and stir constantly until the lemon cream thickens.
  • Cover tightly with parchment paper and allow to cool for about 30 minutes. This will not form a crust.
  • To assemble the cake, cover one of the trays with a large sheet of baking paper, including the walls.
  • Place the first sheet of puff pastry on the bottom, pour the cream on top and place the second sheet on top.
  • Cover with plastic wrap and refrigerate overnight.
  • Remove the cake from the pan, moisten a serrated knife and cut it. Rinse the knife after each incision.
  • Sprinkle with powdered sugar and serve.
